Fats and Oils: Chemistry, Health, and Nutrition
ID: 722150
Ohio, USA
Expert is very knowledgeable about dietary fats in relation to health. He has identified investigators to conduct studies for the ISEO, assisted with design of experiments, provided status reports of studies to members of the ISEO Technical Committee, and reviewed study manuscripts prior to submission for publication. He has also published papers and has given invited lectures on this topic. Expert served as an associate editor for news on health and nutrition of fats for two publications of the American Oil Chemists’ Society: the Journal of the American Oil Chemists’ Society and INFORM. This work included preparing special articles for these publications.
He has also prepared journal articles and book chapters and made oral presentations on the subject of trans fatty acids. He has published assessments of the availability of trans fatty acids in the U.S. diet. These papers have been cited widely. During the early 1990s, Expert coordinated for the ISEO a significant trans fatty acid clinical trial with the USDA. He contributed to the study design, helped to arrange diet analyses, monitored the study for the industry, and assisted with preparation and review of a manuscript for publication.
Expert recently conducted a literature review for a client on the physiological effects of fatty acids as related to their position on triglycerides. He then prepared and submitted for publication a review article based on his assessment of the literature. The article has been accepted for publication in Lipids pending approval of revisions requested.
During the last nine years, Expert has arranged the conduct of many safety studies to assess the irritation/sensitization potential of a variety of personal care products (e.g., hair shampoos and conditioners, hair styling products, body washes, color cosmetics, and fine fragrance products). The studies included repeat insult patch tests and safety-in-use tests. He wrote human safety assessments on completion of the studies to support new or modified products for consumer testing and marketing. Virtually all the products tested were cleared for marketing. In the course of this work, Expert established excellent business relationships with the contract laboratories conducting the testing.
He has been a toxicologist on safety and regulatory matters related to hair care and other personal care products. This work has involved designing and executing safety programs and writing human safety assessments to support new or modified products for consumer testing and marketing. He has presented results of some of the testing at national meetings and has authored or co-authored publications on this work.
Expert has consulted on the safety of selected herbs for food products. He wrote safety assessments summarizing relevant studies and noted problems in many of the studies. His assessments included surveys of label information on marketed products regarding recommended dosages, frequency of use, and levels of active ingredient(s) if noted.
Expert evaluated the safety of selected herbs (e.g., ginseng and ginkgo biloba) to be incorporated into food products for a client. He wrote a safety assessment summarizing his findings. He reviewed scientific literature and wrote a review article for a client on effects of dietary fatty acids as related to their positions on triglycerides. The article has been accepted for publication in Lipids pending revisions requested. Expert arranged and conducted skin safety studies for a client on a series of personal care, color cosmetic, and fine fragrance products. He wrote human safety assessments for the products to support their marketing. He prepared major revisions for an updated version of the booklet, Food Fats and Oils, an important educational/PR reference for the edible oil industry. Expert coordinated a landmark trans fatty acid clinical study for the U.S. edible oil industry with the USDA. He contributed significantly to the study design, arranged diet analyses, arranged GLP orientation for investigators, organized a committee of outside consultants to review methods and results, monitored the study for the industry, and assisted with manuscript preparation and review.
