Expert also has done animal studies examining how different types of dietary fiber influence development of diabetes and obesity. His lab has shown that viscous fibers are very effective in improving blood sugar control and in reducing body fat, as well as altering satiety-related hormones.
Expert is on the Nutrition Advisory Panel for the California Dried Plum Board, which recommends areas of research and reviews research proposals. Expert has consulting with ASYSA of Toyko, Japan, on dietary fiber to reduce body fat.
