He has published over 80 journal articles and 126 abstracts; he has also made over 37 symposia and invitational presentations. He is a leading expert in cheese technology, cheese processing and sprayed dried products. He visits approximately 15 food plants within the United States per year. He regularly consults outside of the United States, where he focuses on sanitation (CIP, COP), dairy processing, energy cost, laboratory tests, and packaging issues. He teaches food processing, packaging and research and development courses at the Employer.

1999. Raskas Foods, St. Louis, MO. Extensive plant inspection and troubleshooting to solve Chymosin clotting problems in 40,0000 liter vats.
