Expert obtained his Ph. D. in organic chemistry in 1997. He followed post-docs at the French National Institute for Agricultural Research (INRA Montpellier and Versailles). His research focuses on medicinal plants, natural products, especially polyphenols, their role in food technology, their organoleptic properties, and their beneficial effects on human health. His research on medicinal plants focuses on extraction, isolation, and structural elucidation of natural products about different family (essential oils, polyphenols, iridoids, ...). His research on polyphenols also concerns the transformations that such compounds could suffer during manufacturing, storage, and aging. The reactions responsible for these transformations have been investigated. The newly formed compounds were isolated and identified, and thesis effects of the newly formed compounds on the organoleptic properties of foods have been discussed. Expert has published many research papers, and he is a reviewer for various international scientific journals.
