CORN; CEREAL FOODS. His work has also involved studying the preservation of high moisture corn and other cereal grains, mold spore and mycotoxin content of grain dusts, and the microbial quality of bulk foods in health food stores and supermarkets.
MUSHROOMS. Expert is very knowledgeable in the field of mushroom production, mushroom fermentations and tissue production, the fungal production of beta-carotene, mycoprotein production, fungal fermentations, and the biotechnology of solid state fungal fermentations.
FOOD SAFETY; TOXICOLOGY. At the Employer, he has been responsible for teaching courses in Food Microbiology, Foodborne Infections and Intoxications, Food Toxicology, and Food Mycology. He also contributes to the teaching of courses in Food Processing, Bioprocessing of Foods, and Food Product Development, as well as to seminars in Food Science and Technology and Agriculture Employment.
FOOD POISONING. Expert has been teaching food microbiology and foodborne infections and intoxications for over 30 years. He is familiar with foodborne illnesses and disease agents including Staphylococcus aureus, Eschericia coli 0157:H7, Salmonella, Clostridium perfringens, Clostridium botulinum, Campylobacter, Yersinia, Vibrios, and Bacillus cereus.
MOLDS; FUNGI; MYCOLOGY. Expert teaches a graduate level course in food mycology that covers Aspergillus, Deuteromycetes, Mucor, Rhizopus, Alternaria, cladosporium, Penicillium, and Fusarium. He has conducted research on Fusarium, especially Fusarium moniliforme.
AFLATOXIN; OCHRATOXIN; CYCLOPIAZONIC ACID; VOMITOXIN; ZEARALENONE; FUMONSINS; MONLIFORMIN. Employing his expertise in food toxicology, Expert teaches a graduate level course that covers a broad range of toxins. Additionally, he has researched all of the above toxins.
MONILIFORMIN; FUSARIUM MONILIFORME; FUMONISIN. Expert is currently researching mycotoxin produced by Fusarium proliferatium and Fusarium subglutinans, biocontrol of these molds and others, and effects of food processing on mycotoxins.
